Perfect Pizza Crust1 T. active dry yeast1 1/2 C. warm water (110-115 degrees)2 T. sugar1/2 t. salt2 C. bread flour1 1/2 C. whole wheat flourcornmealpizza toppings of your choiceIn a large bowl dissolve yeast in warm water. Add the sugar, salt, 1 C. bread flour and the whole wheat flour. Beat until smooth. Stir in enough remaining bread flour to form a soft dough (dough will be sticky).Turn onto a floured surface; knead until smooth and elastic, about 6-8 minutes. Place in a greased bowl, turning once to grease the top. Cover and let rise about 1 hour.Punch dough down; roll into a 15" circle. Grease a 14" pizza pan and sprinkle with cornmeal. Transfer dough to a prepared pan; build up edges slightly.Add toppings of your choice. Bake at 425 for 10-15 minutes or until crust is golden brown and toppings are lightly browned and heated through.

Pan Roasted Chicken Breast withSpring Pea and Mushroom "Gratin”By Chef Bryan DameThe Edge Oceanfront Dining,Lincolnville, MEprinter-friendlyServes: 44 six ounces chicken breast halves2 cups bread crumbs1 stick unsalted butter -- melted2 cups assorted mushrooms -- chopped1 cup fresh peas -- shelled1 teaspoon garlic -- chopped1 sprig fresh thyme -- picked & chopped1 sprig fresh tarragon -- picked & chopped1/2 sprig fresh rosemary -- picked & chopped4 tablespoons vegetable oil3 tablespoons sour creamFresh ground pepper & Kosher salt – to tastePreheat oven to 375 degrees f.Heat sauté pan with 2 tablespoons of oil over medium heat. Season chicken breasts with salt and pepper. Sear chick breast in oil until golden brown. Turn chicken in pan and sauté for another 2-3 minutes. Transfer chick to oven to finish cooking (approximately 18 minutes). Combine bread crumbs and melted butter until bread crumbs are well coated. Set aside. Heat sauté pan with remaining 2 tablespoons of oil over high heat. Sauté mushrooms until they are lightly browned, approximately 2-3 minutes. Add peas, garlic, herbs to mushrooms. Season with salt and pepper. Saute mixture for 2-3 minutes more. Remove chicken from oven and allow to rest. Turn oven’s broiler to high. Stir sour cream into mushroom mixture. Top mixture with buttered bread crumbs. Place sauté pan under broiler. Broil mushroom gratin until bread crumbs are golden brown.

Basil In The Kitchen
Fresh garden tomatoes sliced and sprinkled with chopped basil and vinegar and oil are delicious. Basil mixes well with various egg and cheese dishes as well as fruit jams. In general, add fresh basil at the last moment, as cooking destroys the flavor quickly. When adding dried basil to a recipe that calls for fresh, substitute 1/3 the amount called for in the recipe.
My first thought of a basil recipe is pesto. I love pesto – mounded on angel-hair pasta and surrounded with fresh sliced Botanical Interests tomatoes, or spread on broiled fish or grilled chicken, or a baked potato, or a sauce for string beans or pizza, or…you get the idea. It’s great and easy and quick to make.
Pesto (1 cup) 3 cups fresh basil leaves, tightly packed2 large cloves of garlic1 teaspoon salt2 tablespoons pine nuts, toasted1/2 cup olive oil 1/2 cup fresh Parmesan cheese, finely grated Add all ingredients except the cheese to a blender or food processor. Blend until well processed. Beat in cheese just before serving.

As a southerner, I'm certainly familiar with iced tea and lemonade and all the possible permutations you could come up with. But I have to say this idea of raspberry-watermelon lemonade, well, that was a new twist. Chef Chris Green from the Viking Cooking School in Memphis gave me this recipe that's sure to add sparkle to any summer day.
Servings: 4
Ingredients: 6 cups watermelon, cubed and seeded 1/4 cup raspberries 1/3 cup sugar1/2 cup lemon juice1 cup club soda
Instructions: Place the watermelon and raspberries in a blender; cover and blend until smooth. Strain through fine mesh strainer into pitcher. Stir together the sugar and lemon juice until the sugar dissolves; add to strained liquid; refrigerate until chilled, about 1 hour. When ready to serve, add the club soda and pour over ice cubes.

2 Tbsp. Worcestershire Sauce


3/4 tsp. black pepper

2 drops Tabasco
1/2 c. lemon juice


1 small clove garlic, minced

1/2 tsp. dry mustard

salt to taste
Combine all ingredients, heat until butter melts. Broiler juices may be added.

1 (1 pound) loaf cinnamon raisin bread, cubed
1 (8 ounce) package cream cheese, diced
1 cup diced peeled apples
8 eggs
2 1/2 cups half-and-half cream
6 tablespoons butter, melted
1/4 cup maple syrup

a DIRECTIONS
Coat a 9x13 inch baking dish with cooking spray. Arrange 1/2 of the cubed raisin bread in the bottom of the dish. Sprinkle the cream cheese evenly over the bread, and top with the apples. If you like extra raisins, add them now. Top with remaining bread.
In a large bowl, beat the eggs with the cream, butter, and maple syrup. Pour over the bread mixture. Cover with plastic wrap, and press down so that all bread pieces are soaked. Refrigerate at least 2 hours.
Preheat oven to 325 degrees F (165 degrees C).
Bake 45 minutes in the preheated oven. Let stand for 10 minutes before serving.
