vanilla zuchini mufins

Vanilla Zucchini Muffins2 eggs 1 cup sugar 1/2 cup oil 1 tbsp. vanilla 2 cups shredded, unpeeled drained zucchini 2 cups flour 1 tsp. baking soda 1/2 tsp. baking powder 1 tsp. cinnamon 1 cup raisins 1/2 cup chopped nuts Combine eggs, sugar, oil and vanilla. Stir in zucchini. Combine remaining dry ingredients and set aside 1/4 cup dry mixture and toss with raisins and nuts. Add zucchini mixture to remaining dry mixture and stir to blend. Fold in raisins and nuts. Place mixture 2/3 full into prepared muffin tins or cups. Bake in a 350 oven 20 to 25 minutes or tests done. One dozen muffins.

Use Bleach Once a Month to Keep Drains Clear
We recently paid a plumber $95 to clean a clogged bathtub drain. All our home remedy tips did not free the clog. In fact, we even had to have them get the "snake" that we had used out of the drain because it was lodged in and we couldn't get it to move. He shared a tip that will help keep drains clear. The problem we had was that hair had clogged it up. He said to pour a half gallon of Clorox in there once a month to keep it flushed. He also said never to use those liquid drain cleaners in a situation like this because they would just stop at the blocked up place and make the situation worse.

Penne Primavera with Shrimp

Ingredients
8 ounces Dreamfields Penne Rigate (3 cups uncooked)
1 1/2 cups baby carrots
1 1/2 cups sugar snap peas, about 12 ounces
1 tablespoon olive oil
2 cloves garlic, minced
1/4 teaspoon salt
1/4 teaspoon ground black pepper
12 ounces fresh shrimp, peeled and deveined
1/4 cup white cooking wine
1/4 cup grated Parmesan cheese
1/2 cup half & half
1 tablespoon lemon juice
3 cups baby arugula (or spinach)
Directions
Bring 2 quarts of water to a boil in a large pot. Add carrots and snap peas and cook for 3 minutes. Remove with a slotted spoon. Add pasta to the boiling water and cook according to package directions.
Over medium-high heat in a large skillet, heat oil. Add garlic and saut� for 1 minute. Add carrots, snap peas, salt and pepper and cook for 2 minutes. Add shrimp and wine and cook until wine has evaporated. Add cream and lemon juice, reduce heat and simmer for 3 minutes.
In a large bowl, toss together hot pasta with shrimp and vegetable mixture, arugula and Parmesan cheese. Serve immediately.

6 Morningstar Farms® Maple Flavored Veggie Sausage Patties 1 small cooking apple, cored and chopped 1 tablespoon sugar 1/2 teaspoon cinnamon 4 cups cubed, firm-textured multigrain bread 1 1/2 cups shredded Cheddar cheese 6 eggs, beaten 1/3 cup sour cream 2 tablespoons sugar 1/2 teaspoon vanilla 1/4 teaspoon salt 1 1/2 cups fat-free milk

Chop Morningstar Farms® Maple Flavored Sausage Patties into bite-size pieces. Set aside. In small bowl toss together apple, 1 tablespoon sugar and cinnamon. Set aside. Place half of the bread in 8 x 8 x 2-inch baking dish coated with nonstick cooking spray. Top with half of the veggie patties, half of the apple mixture and half of the cheese. Repeat layers. In medium bowl whisk together eggs and sour cream. Whisk in 2 tablespoons sugar, vanilla and salt. Add milk, whisk until combined. Pour over mixture in baking dish. Cover and refrigerate for 2 to 24 hours. Bake, uncovered, at 325 degrees F about 70 minutes or until a knife inserted in center comes out clean (170 degrees F.). Let stand for 10 minutes before serving.

Blossom end rot shows up as dark, sunken spots on the blossom end of
tomatoes, peppers, and squash. It's caused by a calcium imbalance in the
plant -- the soil may have adequate calcium, but the plant isn't able to take
up enough to supply the rapidly developing fruit. To minimize the problem,
keep soil evenly moist, apply a layer of mulch to conserve moisture, don't
over fertilize (avoid high-nitrogen fertilizer), and avoid damaging plant roots
while cultivating.

'Indeterminate' or vining tomato plants produce many suckers -- new shoots
that start where a branch connects with the main trunk. Removing suckers
will decrease the number of fruits produced, but the remaining tomatoes will
be larger and will ripen sooner.

Aspirin...Water?

Aspirin water has been found to promote healthy growth and enable plants
to stand up to insects and diseases. Dissolve 3 aspirins in 4 gallons of water
and spray plants. One time is all that's needed.

Iron phosphate granules, sprinkled around plants, are an effective, nontoxic

Basil In The Kitchen
Fresh garden tomatoes sliced and sprinkled with chopped basil and vinegar and oil are delicious. Basil mixes well with various egg and cheese dishes as well as fruit jams. In general, add fresh basil at the last moment, as cooking destroys the flavor quickly. When adding dried basil to a recipe that calls for fresh, substitute 1/3 the amount called for in the recipe.
My first thought of a basil recipe is pesto. I love pesto – mounded on angel-hair pasta and surrounded with fresh sliced Botanical Interests tomatoes, or spread on broiled fish or grilled chicken, or a baked potato, or a sauce for string beans or pizza, or…you get the idea. It’s great and easy and quick to make.
Pesto (1 cup) 3 cups fresh basil leaves, tightly packed2 large cloves of garlic1 teaspoon salt2 tablespoons pine nuts, toasted1/2 cup olive oil 1/2 cup fresh Parmesan cheese, finely grated Add all ingredients except the cheese to a blender or food processor. Blend until well processed. Beat in cheese just before serving.

As a southerner, I'm certainly familiar with iced tea and lemonade and all the possible permutations you could come up with. But I have to say this idea of raspberry-watermelon lemonade, well, that was a new twist. Chef Chris Green from the Viking Cooking School in Memphis gave me this recipe that's sure to add sparkle to any summer day.
Servings: 4
Ingredients: 6 cups watermelon, cubed and seeded 1/4 cup raspberries 1/3 cup sugar1/2 cup lemon juice1 cup club soda
Instructions: Place the watermelon and raspberries in a blender; cover and blend until smooth. Strain through fine mesh strainer into pitcher. Stir together the sugar and lemon juice until the sugar dissolves; add to strained liquid; refrigerate until chilled, about 1 hour. When ready to serve, add the club soda and pour over ice cubes.

1 (1 pound) loaf cinnamon raisin bread, cubed
1 (8 ounce) package cream cheese, diced
1 cup diced peeled apples
8 eggs
2 1/2 cups half-and-half cream
6 tablespoons butter, melted
1/4 cup maple syrup

a DIRECTIONS
Coat a 9x13 inch baking dish with cooking spray. Arrange 1/2 of the cubed raisin bread in the bottom of the dish. Sprinkle the cream cheese evenly over the bread, and top with the apples. If you like extra raisins, add them now. Top with remaining bread.
In a large bowl, beat the eggs with the cream, butter, and maple syrup. Pour over the bread mixture. Cover with plastic wrap, and press down so that all bread pieces are soaked. Refrigerate at least 2 hours.
Preheat oven to 325 degrees F (165 degrees C).
Bake 45 minutes in the preheated oven. Let stand for 10 minutes before serving.

Recipes in a Three Ring Binder
I have made a "recipe notebook" out of a 3-ring binder and clear insert pages to hold all my recipes that were loose in my kitchen drawer. I have also written down my recipes "from memory", that I know how to make, but never bothered to write down. This way my girls will have all of Mom's recipes when I'm gone.

When my daughter was in grade school, I couldn't afford new school clothes every year, so I purchased an A-line (no waistline) dress pattern with the option of cap or long sleeves and three neckline options. The body consisted of a front and two back pieces and it was an easy to sew pattern with a zipper down the back. Back then material was four yards for a dollar, so I'd buy lots of different two yard lengths of material and made several dresses with various necklines and sleeves.
The following year, the top of the dresses would still fit her, but the dresses would be too short, so I cut off the hems and made new hems. Those dresses made perfect blouses. Then I added an inch or two to the length of the dress pattern, bought more material and she had new dresses for the next school year. Those dresses became blouses for the following year and she was always getting compliments on her pretty clothes.

They asked if anyone had any furnishings they no longer wanted. They'd be glad to come get them for the boys. A few weeks later, we learned the boys got several pieces of furniture, as well as some appliances and knick-knacks as a result of this request. It saved the young men a tremendous amount of time of not having to search the classifieds or going all over searching for these items, not to mention the money they all saved!

Here's the one we really like. It's from the booklet that came with my Pancake Puffs Pan. It works just as well if you pan fry them, or put them into mini muffin pans and bake or broil.1 lb crab meat, coarsely ground1 egg1/4 cup dried bread crumbs (or 1 slice bread)1 tbs mayonnaise1 tbs mustard1 tsp baking powder1 tbs milk or cream1/2 tsp parsley1 tbs old bay seasoning1 tbs Worcestershire sauceCombine all ingredients in the usual manner and cook. I've also substituted lobster, crawfish or salmon. If I do the salmon, I add a dash of dill weed. I generally use a spicy mustard, not the usual yellow mustard. If you want to make ahead, freeze and then vacseal. They'll be good for several months.

Low Fat Fried Chicken 4 chicken breasts, skin removed 1/2 cup flour Egg beaters equal to 1 egg 1/2 cup skim evaporated milk 1/2 teaspoon garlic powder 1/2 teaspoon paprika 2 cups corn flake crumbs Non-fat cooking spray Preheat oven to 350F. Combine flour, Egg beaters, garlic powder, paprika, and milk to make a batter. Dip chicken in mixture, then roll in corn flake crumbs. Spray a casserole dish with cooking spray. Place prepared chicken breasts in dish. Bake 1 hour or until browned & done.

These Italian Cookies are all that.I make cookie trays for a lot of different occasions-and I make sure this cookie always has a spot on them....they're pretty and they're SO good! Another plus? They make a lot-well over 100 if you roll the balls of dough small....and I highly suggest you do-with all that baking powder they really grow!!!I know that some people don't like Anise flavoring....I'm Italian and grew up with it...in fact my Mom told me that she gave me Anisette Toast when I was teething rather than Zweiback cookies. If you don't like Anise, feel free to use any extract you choose-lemon is very good as well as orange...or almond....you make the call! I will sometimes add a tiny bit of extract to the glaze too so that I get a double layer of licorice flavor....YUM!ITALIAN COOKIESCarols RecipeCookies:1/2 c. butter or margarine1/4 c. shortening3/4 c. granulated sugar4 eggs3 c. all-purpose flour5 tsp. baking powder1/2 tsp. salt2 tsp. anise extract (can use vanilla or lemon extract instead)Glaze:2 c. confectioners' sugar, sifted2-4 Tbsp. milkFor cookies:Melt butter and shortening together. Add the sugar; mix well. Add the eggs, one at a time, beating well after each addition. Mix in the anise extract. Sift or whisk together flour, baking powder and salt. Add to creamed mixture gradually. If the dough is too sticky to roll in the palm of your hand, add flour until firmer, but it should be very soft. Roll dough in small balls (these tend to really puff up with all the baking powder in them!) and place on ungreased cookie sheets. Bake @ 375 degrees for 8-10 minutes (the bottom should be lightly browned but the tops should remain light). Remove cookies to wire rack and cool completely before glazing.GLAZE:Mix milk GRADUALLY into confectioners' sugar to make a thick glaze...make sure to keep it on the thick side. Dip top of each cookie into glaze. Sprinkle with colored jimmies or nonpareils while glaze is still wet. (I usually dip 10-12 cookies, return them to the wire rack (with wax paper under the racks to aid in clean up!) and then sprinkle those cookies before starting to dip more.)Makes a lot of cookies, depending on how large you roll them.I usually roll the dough into 3/4" balls-maybe a little bit smaller-I get about 100 cookies from one batch when I roll them this size.
